MUSKEGON, MI – Rocky Swanson took decades of food experience and poured it into pizza at his downtown Muskegon eatery.

Creative pizzas like Mexican street corn elote, blueberry crisp and ratatouille au-gratin have all been featured at Rolling Stone Wood Fired Pizza Co., located at 307 W. Western Ave. Suite A.

“I’m constantly inventing, reinventing and deconstructing dishes from my past and reconstructing them on a pizza,” said Swanson, who has been a chef for roughly 40 years.

Located in the Western Market, Rolling Stone Wood Fired Pizza Co. started six years ago when Swanson impulsively bought a small wood fired pizza oven off Craigslist.

“I immediately fell in love with it,” he said.

Swanson then taught himself how to make the dough, stoke the fire and “all the things that made it like real pizza from Italy.”

Individual-sized pizzas are handcrafted by Swanson and Charlie Edgerton, a trained pizzaiolo certified in wood fired pizzas.

The dough is prepared with flour from Italy, proofed, stretched, loaded with toppings and slid into the wood-fired oven where it takes 60 to 90 seconds to cook.

Swanson and Edgerton assemble and sell about 100 pizzas a day.

Rolling Stone Wood Fired Pizza Co. offers a six-pizza set menu that features a classic Americana with Italian sausage, pepperoni, mushrooms, caramelized onion, roasted peppers, mozzarella and sprinkled with parmesan for $15.

A lox-n-crust pizza is topped with garlic chive cream cheese, red onion, grape tomatoes, smoked salmon, capers, chives and raspberry infused white balsamic reduction and is available for $14.

“Our pizzas are layered, they’re all tested and they’re balanced,” said Swanson.

Each week, Swanson assembles a feature board with one meat and one veggie pizza using inspiration from in-season produce and herbs grown behind the pizza shop.

“Everything’s fresh. I have the farmers market an arm’s reach away,” he said.

Past inventions have been a BLT pizza and a “peachy keen” topped with fresh local peaches and leeks, prosciutto, parmesan, Romano cheese, honey and a balsamic reduction.

The creative features are only available for one week before Swanson moves onto his next idea.

Rolling Stone Wood Fired Pizza Co. is open Wednesday through Friday from 11:30 a.m. to 9 p.m. and Saturday from 9:30 a.m. to 6 p.m. The pizza joint can be reached at 231-760-3559 or learn more on its website here.
